Tomato, Cucumber & Onion Salad

As prepared by Chef Maria Hines of Tilth Restaurant for her cooking demonstration on September 15, 2010.

Ingredients:

  • 3 ea. tomato
  • 1 ea. Walla Walla sweet onion
  • 2 ea. lemon cucumber
  • 1 ea. cucumber
  • 3 ea. sprig dill
  • 1 c. low fat greek yogurt
  • 1 ea. clove garlic
  • salt
  • black pepper

Preparation:

Simply cut vegetables into a ¼”-½” dice, chop garlic and dill fine and combine these ingredients in a large bowl. Salt & pepper to taste, add yogurt, and combine thoroughly.
